I love the simplicity of good food in the summer. I find it so much easier to eat healthy, and boy do I need to do that. I won’t go into to big, long saga about my health here. Maybe another day. I will share that I am actively pursuing improved physical, emotional and spiritual health.
So, for lunch today, I tossed together one of my favorite summer salads.
Sweet little tomatoes
Sliced sweet onion
Slices of fresh mozzarella
Fresh ground black pepper
Toss it all together in a bowl and eat some for lunch!
Don’ ask about measurements, I just eyeball it.
